What is Sushi?

The word Sushi is an old form of a Japanese word, which is no longer in use in other contexts and which means "it is sour".

Why is 'it' sour Because it is covered in vinegar. What is it that is covered in vinegar? Rice. Sushi in Japan means 'rice in vinegar'. In the West sushi is often taken to mean 'raw fish' but this is a misconception.sushi

The only basic ingredient for sushi is rice, to which is added rice vinegar, salt and sugar.

Sushi is also tradtionally accompanied by three condiments:
  • Soya sauce, into which the sushi is dunked to bring out the flavour

  • Wasabi, a type of strong Japanese mustard

  • Marinated ginger (optional) and used to freshen up the taste between sushis

Is Sushi Healthy?

Sushi is also a health food. Rice is rich in minerals such as phosphorus, starch and vitamin B1, with a high level of carbohydrates.

Ginger and vinegar have antiseptic properties, and also stimulate the appetite and help digestion.

Soya sauce is very rich in proteins and iron . In addition the fats in soja, which are mainly unsaturated , provide fatty acids which are essential against cholesterol.

Dried seaweed (nori) provides multivitamins and calcium.

Wasabi protects against tooth decay. It contains molecules called isothiocyanates, which prevent bacteria from adhering to the teeth.

Sushi is an excellent healthy well-balanced dish. It is very popular in Japan, and is becoming increasingly popular outside Japan.
